A cheese made from curdled goat's milk and ripened from 2 to 4 weeks with a thin bloomy rind. Salted by hand and rolled in the ash of maritime pine wood, this cheese offers a discrete goat cheese flavour and reveals notes of hazelnut. The brittle texture soon softens in the mouth. This small, round, ash rind cheese will stand out from the crowd on any cheese platter.
