Pikauba is a semi-firm farm cheese that can be enjoyed in wedges or melted in a raclette. Beneath its delicate orange-coloured rind lies a golden yellow cheese that is yielding and dotted with small holes. Aged three to four months, it has a buttery, slightly fruity taste.
Inspired by a Félix Leclerc quote, "Our lives are like rivers, calm in the depths and turbulent on the surface.", the cheesemakers named Pikauba after a river that flows through the Parc des Laurentides.
